Healthy Shredded Pork Soft Tacos


I'll let you in on a little secret...

I don't like to cook. 
[insert gasp here].

I love to bake, but not so much cooking. I think it's because I am not really good at it, my recipes don't turn out tasting absolutely amazing, and nobody likes the clean-up part. 

However, I had the desire to make shredded pork soft tacos the other day. All the recipes I found online were for crockpot tacos, but I needed to make a quick dinner, so this recipe was born. 

Ingredients: 
2 lbs of boneless pork (of however much you want to make) 
chili powder 
garlic powder 
cumin 
cayenne pepper 
sea salt 
brown sugar
Fage greek yogurt [plain] 
Organic Wholly Guacamole 
shredded cheddar cheese 
whole wheat tortillas

1. Cook pork in large frying pan or in a wok. I used a wok because my frying pan was dirty, but using a wok was completely unnecessary. So don't feel inclined to do that. Fill your pan with water that barely covers the pork. Let it cook until the center of the meat isn't red or pink. 
2. Drain water, until there is about 1/2" in the bottom of the pan. Continue to cook meat. 
3. Create the seasoning. Mix together all spices and brown sugar. I am not one to measure precise teaspoons for 8 different spices... I just like to eye it. So I mixed together equal parts of chili powder, garlic powder, and cumin. I added pinches of cayenne pepper, sea salt, and brown sugar. Adjust according to how sweet (brown sugar) or spicy (cayenne pepper) you want the meat to be. 
4. Mix in spice mixture with the meat as it cooks. You may need to make more after you put your spices in (Put in as much as you desire). 
5. Keep stirring the meat until it is fully cooked and soft enough to shred. I used a large fork utensil and a regular-sized fork to shred it as it cooked. 
6. Get your toppings for your tacos! This is the easy part. I use the 7 oz packages of Fage plain greek yogurt instead of Sour Cream. It is way healthier and it tastes amazing! I also use Organic Wholly Guacamole. This stuff is seriously so delicious and healthy! It is used with all pure ingredients and I know what everything in the ingredients list is.
